Employer Description A Luxury Retirement Estate located in the Johannesburg Northern Suburbs. Our Client, a Luxury Retirement Estate located in the Johannesburg Northern Suburbs requires a good Catering Manager to manage the Kitchen/Catering/Food Service for their 24 Assisted Living and 16 Frail Care Residents, in their restaurant and if needed to their bedsides. To be fully responsible for all Stock and Assets of the restaurant. Control the Point of Sales System (Pastel POS). Stock Take procedures as and when required. Control all suppliers and creditor invoices, and their accuracy. Processing of orders as and when required, receiving, and checking delivery, issuing of stock, and entering into the system. Allocate to the department and capture invoices on the system. Maintain a high standard of customer relations and personal contact with residents/guests and ensure that any complaints are dealt with immediately and efficiently and are reported to Estate Manager. Ability to stand in when Estate Manager is away. Creates an atmosphere of teamwork and cooperation. Be familiar with all fire, safety, and emergency procedures and be able to communicate them to guests and staff reporting to you. Knowledge of food cost and back-of-house procedures.
Events planning and execution (For internal socials such as Valentines day lunches/dinners, Christmas Functions with external family members), Braais to encourage social interaction of residents). Staff Training. Menu planning of nutritious food taking into account the elderly. This is very important, as our residents often have medical problems which require a special menu. Some Background info: The last Catering Manager was with the company for over 5 years and only left as her husband found a position in another area. The role is immediately available. Estate will wait for the right candidate (Notice Period). We are seeking the right long term fit and TEAM PLAYER who will slot seamlessly into the current team which is a great group of people. Ideally seeking someone who resides in the JHB North/Midrand/Sandton/Lonehill/Sunninghill/Bryanston area. The Venue offers a Cooked Breakfast or cold breakfast to residents daily. Preferences are selected on check sheets daily for all meals for the following day so preparations can be made accordingly. Lunch is the main meal of the day comprising of a Hot Meal and Dinner is always a different soup and light meal accompaniment offering such as a quiche or an omelet or toasted sandwich. All options with Special Dietary offerings/amendments in mind. Two tea/coffee breaks are offered to the residents per day with either Biscuits, Scones or a similar accompaniment. There are 2 Shifts. This position will manage a Supervisor, a Chef , 3 Waitresses and 1 Cleaner per shift. You will report directly to the Estate Manager. Working hours are Monday to Friday 6h00 to 15h30. The Supervisors are strong and manage over the weekend and in the Evenings generally unless there is a special event/function/requirement for you to be present after hours. Qualifications A Catering Management/Culinary Management Qualification is advantageous. Good Food Preparation Knowledge. Skills Own Transport and Valid Driver's License essential essential. The candidate should be a team builder with the ability to motivate and inspire staff to work together, towards common goals. The candidate should be hard on standards, have a keen eye for detail, and a commitment to maintaining high levels of cleanliness, hygiene, and food quality. Knowledge of food preparation, preparing weekly menus, overseeing food prepared daily. Knowledge on dementia/elderly care advantageous but not essential. Must be empathetic with good communication skills. Own Transport and Valid Driver's License essential. Benefits Negotiable
