Our client, a prestigious luxury fine dining hospitality property located in the Stellenbosch Cape Winelands, is seeking an experienced Sous Chef to support the Head Chef in managing a high-performing fine dining kitchen. This role is suited to a confident senior chef with strong leadership ability, exceptional organisational skills and a passion for consistency and excellence in food delivery.

The Sous Chef will play a critical role in the day-to-day running of a busy professional kitchen, ensuring smooth service and maintaining the highest culinary standards. You will lead the kitchen team in the absence of the Head Chef, providing guidance, structure and on-the-job training to junior chefs.
Key responsibilities include overseeing food preparation and presentation, ensuring every dish meets required standards for quality, portioning, temperature and consistency. You will manage kitchen stock and ordering, enforce strict FIFO procedures, minimise waste and assist with budget control.
The role requires close collaboration with the Head Chef on menu development, staff training and kitchen organisation. You will be responsible for staff rosters, leave planning and ensuring all team members are aligned with daily reservations, events and menu requirements. Health, safety and hygiene compliance is a non-negotiable focus in this environment.
This is a hands-on leadership role within a structured and fast-paced fine dining operation that demands calm decision-making and attention to detail under pressure.
