High-end Safari Lodge is looking for a SOUS CHEF
A sous chef in a luxury lodge setting is the trusted second-in-command in the kitchen, responsible for supporting the executive chef in menu planning, supervising food preparation, and ensuring that every dish meets the highest standards of taste and presentation. They balance creativity with precision, bringing local flavors to life while maintaining consistency across service. Beyond cooking, they mentor junior staff, manage kitchen operations, and uphold strict hygiene and safety practices. In a remote, hospitality-driven environment, the role requires adaptability, resourcefulness, and a flair for storytelling through food, ensuring that each meal becomes a memorable part of the guest experience.
Core criteria:

  • At least 3-5+ years of Sous level experience within a luxury safari establishment (preferred)
  • A formal culinary qualification
  • Able to assist the Head Chef in implementing kitchen standards
  • Be able to co-manage all administrative departmental duties (staff files, off-day schedule, hygiene standards etc.)
  • Must be excellent in stock controls, ordering processes, and stock rotation
  • Proactive maintenance of all kitchen equipment
  • Excellent written and verbal communication across all departments.
