The Manhattan Hotel in Pretoria CBD is looking for a skilled Food & Beverage Manager with strong capabilities and appropriate work experience to join its dynamic team.

Qualification and work experience

Required:An Industry related qualification - Diploma / Degree
Minimum of 5 years' experience as a Food & Beverage manager in a hotel environment

JOB DESCRIPTION & RESPONSIBILITIES:

- Responsible for new appointments in the F&B Department
- Responsible for new staff training.
- Check overall cleanliness and neatness of storerooms, offices, and work areas.
- Performance appraisals and new staff probation documentation to be done.
- Staff concerns - one on one meetings with each staff member (care, connect and develop).
- Supervise restaurant parades and operational communication to waiters.
- Ensure quality of food is checked, presentation and name tags are available.
- Observe service by waiters, cashiers and supervisors and ensure stellar guest service.
- Ensure optimal quantity of food on the buffet (no wastage or shortages).
- Check overall cleanliness of restaurant, bar, and lounge.
- Monitor staff / guest interactions - Staff training, disciplinary action.
- Weekly toolbox talks
- Guest service training (how to host & interact with guests)
- Uber eats menu design & webpage management.
- Kounter stock control program operation & interface management.
- Daily variance reports - calculate stock shortages, investigate reasons, if necessary, follow with charges or disciplinary action.
- Check marketing charges of KAM (Sales & Marketing Key Accounts Managers) hosting clients and ensure authorized vouchers are issued.
- Scrutinize voided items and reasons.
- Validate sales posted to internal folios.
- Review duty manager postings (tips / scans of dockets / charges).
- Calculate G.P. percentage monthly including all supporting documentation.
- Review daily staff clock ins and outs - report on short / overtime to HR.
- Assist and supervise monthly stocktakes.
- Responsible for monthly operational stock reports.
- Supervise breakfast, lunch & dinner service when on duty.
- Supervise functions and events.

General:
- Restaurant bookings (breakfast, lunch, dinner) calculations & figures to be done and communicated to all relevant staff and departments.
- Weekly meetings with duty managers to discuss feedback on staff performance, operational challenges and individual growth and performance.
- Monthly meetings with supervisors (challenges / staff concerns / operational issues & requirement.
- One on one meetings with staff (connect, plan individual growth in department and company)
- Weekly meeting with banqueting manager (functions, staff concerns, operating equipment, stocktakes, operations).
- Quotes for operational stock - discuss with GM or finance manager. Place orders and receiving of stock items. Operating stock database management.
- Ensure all liquor orders are placed and received. Missing stock items to be ordered from alternate supplier.
- Monthly gratuity report, distribution and recon to be done.
- Plan events (wine tastings / beer tastings / other) including menus, mail-shot attachments, and posters.
- Assist and supervise high volume bookings in restaurant and / or function venues.
- DM float checks.
- Menus (pricing calculations, design, website menus).
- Duty manager rosters - act as duty manager when required.
- Monthly stacking and storage checks in all departments. Weekly stacking & storage checklists.
- Health and safety checks to be done.
- Weekly HR meetings (discuss new appointments, disciplinaries, HR documentation, overtime & short time worked by staff, external and internal training)
- Financial meetings with finance manager done monthly.
- Manage maintenance on all coffee machines.
- Manage service agreements with suppliers (CIRO, UberEATS, Infinity Water Solutions, other).
- Lease with executive chef on new menus, events and catering and costing of menus.
- Guest complaints - Ensuring contact with each guest about complaints and the resolution thereof.
- Respond to Uber eats feedback (individual messages and communication).

General
- Must undergo a Pre-Employment Polygraph test, done by Forensic Specialist

Salary: From R25,000.00 per month
