Responsibilities:Creating & preparing a rich sushi menu with various main ingredients and raw fish (salmon, tuna, unagi)
Prepare appetizers, soups and salads that are close to the philosophy of Japanese cuisine
Manage and lead the kitchen staff in head chefs absence
Coordinate with our wait staff to ensure proper cooking, considering special requests and food allergies
Provides guidance & training to junior kitchen staff members, including but not limited, to line cooking, food preparation and dish plating
Supervises all food preparation and presentation to ensure quality and restaurant standards
Oversee and organizes kitchen stock and ingredients, including proper dating and quality assurance
Improve waste reduction and manage budgetary concerns
Works with head chef to maintain kitchen organization, staff ability and training opportunities
Monitor and maintain hygiene and health and safety principlesRequirements:Matric, Culinary
Culinary Diploma / Sushi Qualifications
Preferably 4+ years previous experience in a Senior Sushi Chef role.
Good knowledge of various sushi types and sushi-rolling techniques
Own transport with valid drivers license
Ability to work both fast and accurately
Leadership and management skills
Able to work in a team
Basic computer skills (word, excel, outlook)
Exceptional customer-service skills
Excellent written & oral communication skills
Strong organizational skills
Attention to detail
Availability to work within opening hours (e.g. evenings, public holidays, weekends)
