JOB DESCRIPTION RESTAURANT MANAGER

The position of Restaurant Manager consists of planning, assessing, directing and coordinating activities within the entire establishment as well as a hands on approach is required.
Tasks
Help the Executive/Head Chef coordinate assignments of cooking personnel to ensure economical use of food and timely preparation;
Count float and change bag on a daily basis, do cash ups and make sure there is always enough change at all times;
Establish, improve and maintain standards for personnel performance and customer service;
Investigate and resolve complaints regarding food/beverage quality and service;
Maintain food and equipment inventories, and keep inventory records, spot checks to be done on a regular
basis;
Monitor budgets and payroll records (Time Keeping);
Monitor compliance with health and fire regulations regarding food preparation and serving, and general
building maintenance in and around the establishment;
Monitor food preparation methods, portion sizes, and garnishing and presentation of food to ensure that
food is prepared and presented in an acceptable manner;
Schedule and receive food and beverage deliveries, checking delivery contents to verify product quality and
quantity;
Schedule staff hours, breaks and assign duties on a continuous and daily basis;
Maintain a clean and tidy establishment at all times especially during service;
Adhere to and enforce basic employment regulations;
Always be on the floor during peak times and keep an eye on the waiters;
Always be aware and know what is happening.
Qualifications and requirements
A cookery/hospitality diploma or equivalent training, previous work experience in a similar position advantageous;
Ability to actively look for ways to help people, to adjust actions in relation to others actions, and to use logic and reason to identify the strengths and weaknesses of alternative solutions in order to obtain the best solution;
Ability to multi-task, motivate, develop, and direct people as they work, monitor, assess and identify the best people for the job;
Ability to predict a problem and prevent it before it happens.

Lines of communication
• As a senior employee you will report directly to Henri Martens ( Cornuti General Manger).
Working conditions
This is a full time position where you will be required to work shifts;
Daily working hours may vary due to the unpredictable nature of this industry as well as your
responsibilities;
You are required to be at work during peak times, big events, public holidays, peak season and when
requested to work;
You are here to exceed expectation and to raise the bar from ordinary to extraordinary, compromising
quality and standard will not be tolerated.
