JOB DESCRIPTION
ROLE OVERVIEW
The Restaurant General Manager is responsible for the full operational, financial, and service performance of the restaurant. This role requires a highly organised leader with strong financial acumen, exceptional people management skill, and the ability to maintain standards, systems, and consistency in a fast-paced, high-demand environment.
KEY RESPONSIBILITIESO
Operational Leadership
Oversee daily FOH operations, ensuring smooth, efficient, and consistent service.
Maintain high standards of guest experience, service delivery and hospitality culture.
Manage all opening and closing procedures, shift management and floor control.
Ensure the restaurant runs effectively during high-volume services (250+ pax).
Uphold and enforce all SOPs, checklists, hygiene and compliance requirements.
Financial & Administrative Control
Oversee beverage cost management, stock control, ordering, and supplier relations.
Conduct and verify weekly stock takes, variances, and purchasing reports.
Manage labour budgets, weekly schedules, leave planning, and payroll inputs.
Handle cash-ups, POS reporting, reconciliations, and daily financial accuracy.
Compile weekly and monthly operational and financial reports for management.
People & Performance Management
Lead, train, and develop the FOH team, setting expectations and driving accountability.
Enforce performance standards, discipline, and HR processes when required.
Build a positive, professional team culture with strong communication and trust.
Resolve staff issues, conflicts, and operational challenges quickly and decisively.
Guest Experience
Maintain a visible, calm, confident presence on the floor during service.
Handle guest feedback, complaints, and special requests professionally.
Ensure a consistently elevated dining experience aligned with brand standards.
Systems & Technical Skills
Fully literate in POS systems, inventory software, and basic financial tools.
Strong computer literacy across email, spreadsheets, reporting programs, etc.
Ability to understand and manage restaurant data, KPIs, and performance metrics.
