Job Summary Set against the dramatic backdrop of the Klein Drakenstein mountains lies this recently restored, rejuvinated and redeveloped historic wine estate offering a new 80 seater terrace restaraunt overlooking the eastern slopes of the Paarl Valley and surrounding vineyards ProStaffSelect are in search of a senior pastry chef to inspire a small team in producing a wide range of delectable desserts, morning and daytime pastries, artisan breads, light lunch desserts and sophisticated dinner desserts for the fine dining restaurant. We are looking for candidates with good all round pastry, baking and dessert production skills with proven abilities in plating and garnish components. REQUIREMENTS: Focused pastry qualification At least 4 years' experience within DESSERT Fine Dining or Top 10 Eat Out Establishments Advanced Dessert Techniques needed for detailed plating components and INNOVATIVE plating concepts Must have strong personality and perseverance in working long & demanding shifts Strengths in delegating and leading junior Pastry Team (1 Demi CDP & 1 Trainee) Must be innovative and confident in creating new desserts, costings, managing food cost and GP's for the section Own transport essential due to the location of this preoperty as staff transport is not provided
