Our client a well-known conference / event in the world-renowned Kruger National Park is looking for a well-rounded Food & Beverage Manager that will be responsible for the overall Food and Beverage Service, Restaurants Bars Banqueting and F&B Stores in Lodge and all special catering activities as directed by the General Manager.
Requirements


  • Grade 12/Matric
  • Hospitality Management Diploma or related

Description
  • Ensuring that the correct ordering procedures for all Food Stock and Kitchen Consumables, Kitchen Small and Kitchen Operating Equipment are adhered to, in line with company policy and or as per direction of the General Manager / Financial Manager
  • Ensuring that effective stock control and stock procedures and methods are enforced and will ensure that the cost is maintained as per budgeted results.
  • Oversee monthly stock counts of all Beverage Items, F&B Operating Equipment including AV Equipment and F&B Linen F&B Guest Supplies and F&B Cleaning Supplies, tabulate and report back to the Financial Manager and General Manager on the results.
  • Ensuring that you purchase the best quality product at the best available price in accordance to the standards agreed to by the General Manager; conducting regular basket price comparisons from suppliers, tabulating results and forwarding them to the General Manager and Financial Manager
  • Ensure that the immediate staff, adhere to all HACCAP principles and local legislation governing the service of Food and Beverage.
  • See to it that the Beverages are presented in accordance to the agreed standards, by the General Manager, and that it is served timeously as per the brand standards and Standard Operating Procedures.
  • Ensure that the Team is well trained in terms of Product knowledge to be able to confidently assist guest with any queries relating to the Food and Beverage in the Restaurants and Bars or issues pertaining to the Resort and local attractions.
  • Ensure that the Restaurants and Bars, Food and Beverage Storerooms and Back of House areas are maintained in an appropriate four / five star level and in compliance to the Occupational Health and Safety Act, and Hygiene Laws and HACCAP Principles are Applied
  • Ensure that the products are purchased in accordance to the agreed standards as per direction received from the General Manager.
  • Accountable to ensure integrity of the Micros System in all aspects but particularly to ensure that the employee rights and menu items are well maintained
  • Ensure effective communication with the guests and conducts regular satisfaction checks, feedback to his team and the General Manager
  • Regular changes of cocktail menuxe2x80x99s, wine lists and specials in agreement with the Executive Chef / General Manager and in accordance with the Hotel Brand Standards
