Job Summary Minimum requirements

• At least 5 years' experience in a senior food & beverage role in a luxury or boutique hospitality setting
• Strong working knowledge of wine and wine service
• Genuine appreciation for seasonal cuisine, local produce, and regenerative practices
• A proven history of overseeing multi-outlet operations and managing teams
• Excellent guest engagement and front-of-house service management skills
• Highly organised, creative, and driven by attention to detail
• Hands-on, people-centric leadership style
• Commitment to ethical sourcing and sustainable hospitality standards
• Strong financial acumen (budgets, procurement, cost control)

Key responsibilities

• Guide and refine all food and beverage operations in line with the estate's sustainability and quality vision
• Design and implement tailored guest experiences across dining, tasting, and event functions
• Partner with chefs, winemakers, and growers to develop seasonal menus and beverage pairings
• Inspire and manage a passionate service team focused on excellence and guest satisfaction
• Ensure operational compliance with health, safety, and licensing regulations
• Monitor and control budgets, supplier relations, inventory, and procurement systems
• Drive team development through ongoing training, mentoring, and performance coaching
• Cultivate a unique beverage and wine list that reflects the estate's values and identity
