Key Responsibilities
Lead, mentor, and manage the front-of-house team to deliver memorable, high-end dining service
Uphold impeccable standards of hospitality, guest relations, and restaurant presentation
Oversee reservations, seating plans, and service flow to ensure smooth operations
Collaborate with the sommelier and kitchen to ensure wine & food pairing excellence
Curate, maintain, and enhance the wine list in line with estate offerings and guest expectations
Manage vendor relationships, wine procurement, cost control, and stock management
Drive sales and revenue growth through marketing, events, and upselling
Ensure compliance with health, safety, and hygiene standards
Represent the brand through guest interaction, tastings, and promotional events
Requirements & Skills
5+ years' experience in luxury or fine dining restaurant management
Strong wine knowledge -- ideally WSET / CWA certification or equivalent
Excellent people management skills with a hands-on, guest-centric approach
Proficiency in POS / reservation systems and financial reporting
Strong organisational, communication, and negotiation skills
A calm, poised presence under pressure
