We are seeking a skilled and experienced Executive Chef to oversee a high?volume 100?seater hotel restaurant and multiple busy conference venues. The property offers 60 guest rooms and serves both corporate and leisure travellers. With a prime waterside setting, seafood is a significant part of our offering. Key Responsibilities
Team Leadership & Operations
Hold daily briefings with the kitchen team to ensure clear communication and prompt resolution of operational issues.
Ensure all kitchen employees follow uniform, grooming, hygiene, and safety protocols in line with HACCP standards.
Manage staff development, performance discussions, training, and disciplinary processes.
Promote a positive team atmosphere and encourage unity within the kitchen brigade.
Food Quality & Standards
Maintain company culinary standards in the preparation, cooking and presentation of all dishes.
Deliver an exceptional dining experience by consistently promoting top-tier service and food quality.
Address guest concerns, feedback and suggestions professionally and promptly.
Keep menus updated to reflect seasonality and freshness, including bi?annual revisions to the a la carte menu.
Ensure all kitchens and storage areas remain clean, well-organised and compliant with hygiene standards.
Cost Control & Reporting
Achieve and maintain a food cost target of 39%.
Manage ingredient costing and be able to cost new menu items.
Monitor staff meals and manage wastage in line with the hotel's budget.
Oversee OE spend and control according to financial guidelines.
Submit daily, weekly and monthly reports accurately and on time, as required by company policy.
Work closely with the Cost Controller and Food & Beverage Manager to achieve departmental targets.
General Duties
Attend management and function planning meetings to ensure strong communication between departments.
Ensure compliance with all internal policies, procedures and operational standards.
Applicant Requirements
Minimum 5 years' experience in a senior chef role within a recognised 3? or 4?star hotel environment.
Formal chef training or equivalent qualification is advantageous.
Strong background in a la carte, set menus and buffet service.
Physically capable of working efficiently during high?demand periods.
Willingness to work flexible shifts, including evenings, weekends and public holidays.
Computer literate.
Sober habits and able to provide a valid police clearance.
Three traceable references.
