We are currently looking for qualified Executive Chef with professional culinary skills.

Duties & Responsibilities

• Oversee & prepare meals.

Supervising staff in kitchen, with preparation of meals

• Ensure daily costings & controls are in place & working

• Develop and maintain logistics for meal deliveryxe2x80x99s to various clients

• Ensure quality food is presented, within the budget

• Provide training to chefs to encourage versatility and creativity

• Assist with menu planning, menu costings and co-ordinate with banqueting and Food and Beverage departments

• Manage, train and lead staff

• Oversee hygiene standards in the kitchen. Responsible for hygiene control

• In charge of production, oversee and monitor the quality of food and presentation

• Ensure a consistent Food and Beverage COS in all outlets are maintained and in line with agreed upon Benchmark targets.

• Rostering and PRP compliance

• Assisting with the monthly reporting on all food outlet performances.

• Host Bi-weekly departmental meetings with all subordinates, ensuring a good flow of communication and feedback. Providing minutes of all meetings to senior management.

Qualifications

• Relevant tertiary qualification and/or equivalent.

• A minimum of 5 years of experience in varied kitchen positions including food preparation, line cook, fry cook and expediter.

• Computer literate essential

• Training background

• Fine dining upmarket restaurant experience

• Must have driversxe2x80x99 licence, own transport
