Cost Controller - Luxury Hotel - Camps Bay
Our client, a prestigious luxury hotel in Camps Bay, is seeking a highly skilled Cost Controller to manage and monitor food and beverage costs, stock control, and procurement processes. This vital role ensures the sourcing of high-quality, cost-effective ingredients, while maintaining accurate financial reporting and supporting seamless kitchen and hotel operations.

Key Responsibilities
Ordering & Procurement

  • Place food and beverage orders in line with menu planning, par levels, and operational demand.
  • Source and negotiate with suppliers to secure the best quality and pricing.
  • Ensure procurement follows strict audit procedures using MyInventory or similar systems.
Receiving & Inspection of Goods
  • Receive and verify deliveries against purchase orders and invoices.
  • Check product quality, expiry dates, food safety standards, and delivery conditions.
  • Maintain accurate receiving logs and capture invoices and credit notes promptly.
Stock Issuing & Control
  • Issue stock to outlets in line with actual usage and operational requirements.
  • Record and track all stock movements using Micros Simphony (inventory management system).
  • Lead monthly stocktakes, reconcile variances, and update product pricing.
Cost of Sales & Reporting
  • Calculate outlet recharges and ensure proper cost allocation.
  • Monitor daily revenue, cash-up discrepancies, and void reports.
  • Prepare provisional Cost of Sales (COS) reports by the 10th of each month.
System Administration & General Duties
  • Maintain clear and organized inventory documentation.
  • Administer Micros inventory system setup, maintenance, and troubleshooting.
  • Support finance team with audits and month-end closing.
  • Ensure hygiene and safety compliance in all storage areas.

Qualifications
  • Certificate, Diploma, or Degree in Financial Management or related field.
  • Proven experience as a Cost Controller, Inventory Manager, or similar role.
  • Solid knowledge of food and beverage costing principles and logistics.
Experience & Skills
  • Previous experience in a 4-star or 5-star hotel environment is essential.
  • Proficiency in MS Office (Excel, Word, Outlook).
  • Hands-on experience with inventory management systems - Micros Simphony MyInventory essential, Opera advantageous.
  • Strong analytical, numerical, and problem-solving skills.
  • Ability to thrive under pressure and meet deadlines in a fast-paced hospitality setting.
