Role Summary

To lead and manage the bar team, ensuring the preparation and delivery of high-quality beverages while maintaining efficiency, creativity, responsible service, and compliance with health and safety standards.

Key Responsibilities

Bar Leadership and Management

Oversee the entire bar operation, including beverage preparation, service flow, and presentation. Lead, motivate, and manage the bar team, fostering a positive and productive working environment. Develop and implement bar policies and procedures to ensure smooth and efficient operations.
Menu Development and Beverage Quality

Design and update the cocktail and beverage menu, incorporating seasonal ingredients, popular trends, and innovative techniques. Ensure all drinks meet the venue's quality standards in taste, presentation, consistency, and portion control. Stay informed about beverage trends (cocktails, spirits, wine, beer, and non-alcoholic offerings) and introduce improvements where appropriate.
Staff Supervision and Training

Recruit, train, and develop bar staff, including bartenders and barbacks. Conduct regular performance evaluations and provide constructive feedback to team members. Organise and lead training sessions to enhance knowledge of mixology, product range, upselling, and service standards.
Inventory and Cost Control

Oversee the management of bar inventory, ensuring adequate stock levels and minimising wastage, counting stock in the absence of a stock controller. Work with the stock controller to source high-quality beverages and supplies at the best possible prices.
Monitor beverage costs and implement strategies to maintain profitability without compromising quality.
Bar Hygiene, Safety, and Compliance

Ensure the bar complies with all health, safety, and hygiene regulations, including HACCP principles where applicable. Implement and enforce proper handling, storage, and sanitation practices for beverages, garnishes, glassware, and equipment. Maintain responsible alcohol service standards and ensure compliance with age-verification and licensing requirements.
Collaboration and Communication

Collaborate with the FOH team to ensure seamless service and guest satisfaction. Communicate effectively with restaurant/venue management to align bar activities with business goals. Participate in management meetings and contribute to discussions on service performance, promotions, and improvements.
Problem-Solving and Decision-Making

Address bar-related issues promptly, ensuring minimal disruption to service. Make informed decisions regarding bar operations, staffing, menu updates, and event readiness. Handle customer feedback and complaints related to beverages or bar service, implementing improvements as needed.
Required Skills and Qualifications

Proven experience as a Senior Bartender, Bar Supervisor, or Bar Manager in a high-volume or quality-focused venue. Strong leadership and people-management skills. Excellent knowledge of spirits, cocktails, wine, beer, and non-alcoholic offerings. Creativity and innovation in cocktail development and presentation. Ability to work efficiently in a high-pressure environment. Strong communication and interpersonal skills. Solid understanding of stock control, cost management, and waste reduction. Commitment to maintaining high standards of hygiene, safety, and responsible alcohol service.

Pay: From R6500,00 per month
