We are seeking a skilled and hands-on Bar & Coffee Manager to oversee bar operations, lead a dedicated team, and uphold the restaurant's renowned standard of excellence. This is an opportunity to combine classic cocktail craftsmanship with exceptional coffee culture in a sophisticated, high-end environment.
Key Responsibilities
Staff Training & Supervision
Train bar staff on cocktail recipes (50's & 90's classics and house standards).
Monitor staff performance and ensure consistent service quality.
Maintain staff attendance register during shifts.
Enforce discipline for lateness or non-compliance.
Bar Operations
Oversee bar setup (indoor and outdoor) before service.
Ensure bars are fully stocked with liquor, coffee, garnishes, and glassware.
Implement effective work routines for smooth operations.
Manage cash-up processes and escalate discrepancies to the General Manager.
Stock Control & Replenishment
Monitor stock usage and coordinate timely replenishments.
Maintain accurate stock records and prevent losses.
Supervise refuse removal and ensure storage areas remain clean and orderly.
Service & Cleanliness
Ensure all coffee and cocktails meet La Perla's recipe and presentation standards.
Oversee garnish preparation and drink presentation.
Maintain cleanliness of bars, equipment, and surrounding areas.
Enforce hygiene and safety compliance at all times.
Requirements
Minimum 3 years' experience in bar or beverage management.
In-depth cocktail and coffee knowledge with strong attention to detail.
Excellent leadership, communication, and organizational skills.
Hands-on, proactive, and able to work flexible hours, including weekends and evenings.
