?JD Specialized Recruitment is currently assisting an exclusive eco-luxury lodge in the Eastern Cape to recruit a passionate and hands-on SOUS CHEF to support the Executive Chef in delivering an innovative and sustainable culinary experience.
This is a unique opportunity to be part of a dynamic team building a fully off-the-grid, green kitchen from the ground up-where fine dining blends with sustainability, local culture, and conscious living. The ideal candidate will have experience in ultra-luxury lodges or high-end boutique hotels, a love for refined cuisine, and a strong commitment to eco-friendly practices. Daily guest engagement, food and wine knowledge, and an interest in garden-to-table cooking are key. Responsibilities:
Relevant diploma or qualification in culinary arts
Previous experience as a Sous Chef in a fine dining, 5-star lodge or boutique hotel
Confident, well-spoken, and comfortable engaging with guests daily
Support the Executive Chef in kitchen operations: prep, production, stock control, scheduling, and compliance
Contribute to menu development, incorporating sustainability and zero-waste principles
Assist in managing and mentoring junior kitchen staff with a focus on skills development and local upliftment
Collaborate with FOH to ensure seamless food and wine pairings
Help establish and maintain on-site gardens, integrating fresh produce into daily menus
Embrace a "farm-to-table meets urban refinement" food philosophy
Salary - R30k, live in
Nationality - South African citizens
