SOUS CHEF

Upmarket Restaurant - Cape Town City Centre

We are looking for a well-rounded, experienced

Sous Chef

to join our dynamic kitchen team at an upmarket restaurant based in Cape Town City Centre.

Key Duties & Responsibilities

Assist the Head Chef in managing all kitchen departments and daily operations. Demonstrate strong leadership and communication skills to ensure smooth coordination between Back of House and Front of House. Delegate and supervise daily food preparation while maintaining the highest quality and presentation standards. Coordinate daily tasks with the Head Chef and follow instructions from senior management. Work, manage, and train staff across all kitchen sections:

Hot, Cold, and Pastry

. Estimate daily production requirements and monitor the quality of raw and cooked food products. Develop new recipes and menu ideas aligned with the restaurant's concept and style. Ensure consistent excellence in food production, preparation, and presentation. Maintain high levels of guest satisfaction while controlling food and operating costs. Manage stock ordering, par levels, monthly stock takes, and stock inputting. Update recipe cards and accurately cost all recipes. Ensure full compliance with food safety, hygiene, storage, sanitation, and FIFO procedures. Operate and maintain kitchen equipment, reporting any faults or malfunctions. Maintain a safe, clean, and friendly working environment at all times. Lead by example with personal hygiene, cleanliness, and professionalism on and off duty. Train, guide, and motivate kitchen staff to promote efficiency and cost-effective operations. Conduct daily quality control checks and ensure adherence to service standards. Communicate daily with Restaurant Managers and the Executive Chef regarding operations, functions, and last-minute requirements. Collect daily feedback, report issues, and assist with problem-solving. Carry out any additional duties as required by management.

Requirements

Minimum

2-3 years' experience

in a similar Sous Chef role. Strong leadership, organisational, and time-management skills. Solid knowledge of food preparation, kitchen operations, and safety standards. Ability to work under pressure in a fast-paced environment.
