Sous Chef - Upmarket Restaurant (Cape Town City Centre)



We are seeking a well-rounded, experienced

Sous Chef

to join our team at an upmarket restaurant located in the Cape Town City Centre. The ideal candidate must demonstrate strong leadership, excellent communication abilities, and a passion for maintaining the highest culinary standards.

Job Duties & Responsibilities



Provide strong leadership to assist in managing all kitchen departments. Maintain excellent communication and management skills to ensure smooth operations between Back of House and Front of House. Delegate and assign daily food preparation tasks, ensuring consistent quality and timely execution. Follow instructions and recommendations from superiors to complete daily, weekly, and monthly tasks. Work proficiently across all kitchen sections --

Hot, Cold, and Pastry

-- including training staff in each area. Coordinate daily tasks with the Head Chef. Estimate daily production needs and ensure the quality of raw and cooked food consistently meets restaurant standards. Assist in the development of new recipes and menu items aligned with the restaurant's style and vision. Ensure that food production, preparation, and presentation meet the highest quality standards at all times. Maintain high guest satisfaction levels while monitoring food quality, operating costs, and kitchen efficiencies. Oversee stock ordering, maintain par levels, conduct monthly stock takes, and process stock input accurately. Follow standard procedures for food preparation, receiving, storage, and sanitation. Update recipe cards and perform accurate recipe costing when required. Maintain full awareness of menu items, recipes, production methods, and presentation standards. Adhere to proper food handling, preservation techniques, and temperature controls. Operate and maintain all kitchen equipment while reporting any malfunctions immediately. Promote a safe, clean, and friendly working environment. Uphold hygiene and safety standards personally and across all kitchen staff. Manage deadlines effectively and support team members in meeting theirs. Monitor expiry dates and ensure proper stock rotation (FIFO). Communicate daily with Restaurant Managers and the Executive Chef regarding requirements, functions, and last-minute events. Train and guide staff regularly to maintain high motivation and cost-effective operations. Lead by example in personal hygiene and professionalism both on and off duty. Provide daily feedback and report issues as needed. Conduct quality control checks and maintain adherence to the restaurant's service standards. Perform any additional tasks required by management.

Requirements



Minimum

2-3 years' experience

in a similar Sous Chef role. Full-time, permanent position. Ability to reliably commute or relocate to

Cape Town, Western Cape

before starting work. Fluent in

English
