We are seeking a well-rounded, experienced
Sous Chef
to join our upmarket restaurant located in the heart of Cape Town City Centre. The ideal candidate will demonstrate strong leadership, excellent communication skills, and a passion for delivering exceptional culinary standards.
Job Duties & Requirements
Leadership & Management
Demonstrate strong leadership qualities to help manage all kitchen departments.
Ensure smooth operation between Back of House and Front of House teams.
Delegate and assign daily food preparation tasks, maintaining the highest standards of quality.
Coordinate daily tasks with the Head Chef.
Guide, train and motivate staff to create an efficient and positive working environment.
Set an example of professional hygiene and cleanliness on and off duty.
Culinary Skills & Operations
Work confidently across all kitchen sections: hot, cold, and pastry.
Estimate daily production needs and check the quality of all raw and cooked products.
Create and contribute new recipes and menu ideas aligned with the restaurant's style.
Ensure food production, preparation and presentation meet exceptional quality standards.
Maintain the highest levels of guest satisfaction, food quality, and cost efficiency.
Follow all standard procedures for food preparation, receiving, storage, and sanitation.
Monitor and enforce correct food preservation, temperature control, and FIFO stock rotation.
Conduct periodic checks on expiry dates and ensure proper storage of ingredients.
Update recipe cards and accurately cost recipes.
Assess quality control and uphold service standards consistently.
Administrative & Stock Control
Manage ordering, maintain par levels, and handle monthly stock takes, including input and reconciliation.
Operate and maintain kitchen equipment, reporting any faults promptly.
Provide daily feedback and report issues as needed.
Collaborate with Restaurant Managers and the Executive Chef regarding daily requirements, functions, and last-minute events.
Carry out any additional duties as assigned by management.
Minimum Requirements
2-3 years experience
in a similar Sous Chef role.
Ability to work and lead calmly in a high-pressure environment.
Strong communication, organisational and time-management skills.
Full-time availability.
