Sous Chef - Upmarket Restaurant (Cape Town City Centre)
We are looking for a
well-rounded, experienced Sous Chef
to join our team at a leading upmarket restaurant based in the
Cape Town City Centre
.
Key Duties & Responsibilities:
Provide strong leadership to help manage all departments within the kitchen.
Maintain excellent communication and coordination with both Back of House and Front of House teams to ensure smooth daily operations.
Delegate and assign daily food preparation tasks, ensuring that quality and consistency are maintained at the highest standard.
Follow instructions and recommendations from superiors to complete daily, weekly, and monthly kitchen objectives.
Work confidently across all kitchen sections --
Hot, Cold, and Pastry
-- and train junior staff in each area.
Coordinate daily tasks and kitchen operations in collaboration with the
Head Chef
.
Estimate daily production needs, monitor quality of ingredients, and ensure that standards are consistently met.
Develop new recipes and menu ideas that reflect the restaurant's concept and standards.
Ensure that all food production, preparation, and presentation meet the highest quality standards.
Manage food and operating costs while maintaining optimal guest satisfaction.
Handle stock control, including ordering, maintaining par levels, conducting stock takes, and inputting stock data.
Maintain knowledge of standard food preparation, receiving, storage, and sanitation procedures.
Update and maintain recipe cards, including accurate costings.
Maintain full awareness of menu items, recipes, and presentation standards.
Uphold proper food preservation standards, including correct handling and temperature control.
Operate and maintain kitchen equipment, promptly reporting any malfunctions.
Promote a safe, clean, and friendly working environment.
Ensure all hygiene, safety, and equipment-use standards are followed by all kitchen staff.
Meet production deadlines and encourage team members to achieve the same.
Conduct regular stock rotation and ensure compliance with FIFO principles.
Liaise daily with
Restaurant Managers
and the
Executive Chef
regarding events, special requirements, and operations.
Guide, train, and motivate kitchen staff to foster a productive and cost-efficient working environment.
Lead by example in personal hygiene, grooming, and professional conduct at all times.
Provide daily operational feedback and report any issues to management.
Ensure consistent quality control and adherence to restaurant service standards.
Perform additional duties as required by management.
Requirements:
Minimum
2-3 years' experience
in a similar role within a high-end or fine dining establishment.
Strong leadership, communication, and organizational skills.
Creative and passionate about modern cuisine and presentation.
Ability to work effectively under pressure and during busy services.
Excellent understanding of stock control, costing, and food safety practices.
Reliable and professional with a strong sense of responsibility and attention to detail.
