Sous Chef - Upmarket Restaurant | Cape Town City Centre
We are seeking a
well-rounded and experienced Sous Chef
to join our dynamic team at an
upmarket restaurant
located in the heart of
Cape Town City Centre
. The ideal candidate must demonstrate exceptional leadership, organization, and culinary skills, with the ability to manage multiple kitchen sections and maintain the highest standards of quality and service.
Key Responsibilities:
Assist the Head Chef in managing all kitchen departments and operations.
Lead by example and help create a positive, professional, and efficient kitchen culture.
Coordinate daily kitchen activities and ensure smooth communication between Back of House and Front of House teams.
Supervise and delegate food preparation duties across hot, cold, and pastry sections.
Maintain strict quality control of raw and cooked food products and ensure presentation and taste meet restaurant standards.
Develop new recipes and menu items that align with the restaurant's identity.
Manage food production and prep with an emphasis on quality, efficiency, and cost control.
Participate in menu planning, recipe costing, and regular updating of recipe cards.
Control stock through accurate ordering, maintaining par levels, stock rotation (FIFO), and monthly stock takes.
Ensure compliance with hygiene, food safety, and sanitation regulations.
Train and mentor junior kitchen staff to maintain high performance and consistency.
Monitor and maintain all kitchen equipment, promptly reporting malfunctions.
Provide daily feedback to management and address any operational challenges.
Collaborate with Restaurant Managers and the Executive Chef to plan for special events or daily service needs.
Requirements:
Minimum of
2-3 years' experience
in a Sous Chef or similar leadership role.
Proven ability to manage and work across
hot, cold, and pastry sections
.
Strong organizational and time-management skills.
Excellent verbal communication and team coordination abilities.
Solid understanding of kitchen financials, food cost management, and ordering systems.
High attention to detail with a passion for culinary innovation and excellence.
Knowledge of food safety, storage, HACCP, and sanitation best practices.
Able to work flexible hours including
day and night shifts
.
