The main purpose of the job The successful applicant will be responsible for all food service - related activities which include managing of daily operations of the kitchen area, implementation of the production process, managing food/labour costs and an overall understanding of HACCP. Education and Experience required: xc2xb7 Relevant tertiary qualification in food and beverage services or culinary arts is compulsory. xc2xb7 Minimum 2 years of experience of kitchen management is compulsory. xc2xb7 Experience working within budget guidelines to deliver results is compulsory. xc2xb7 High volume, complex foodservice operations experience is highly desirable. Knowledge, Skills and Competencies: xc2xb7 Knowledge of the catering environment ranging from fine dining to restaurant dining. xc2xb7 Knowledge of South African and industry-specific laws. xc2xb7 Customer service skills. xc2xb7 People management skills. xc2xb7 Communication skills. xc2xb7 Ability to balance the budget and save on soft costs. xc2xb7 Computer literate. xc2xb7 Strong food skills xc2xb7 Ability to come up with innovative menuxe2x80x99s Key areas of responsibility: xc2xb7 Managing daily operations of the assigned unit. xc2xb7 Implementation of the production process. xc2xb7 Managing food/labour costs xc2xb7 Overall understanding of HACCP.
