We are seeking an accomplished Restaurant Manager with the structure, precision, and vision to uphold and elevate this new standard of luxury hospitality. This role is a rare opportunity to shape the guest journey at one of the Winelands most distinctive destinations, where fine dining is enriched by world-class wines, curated art, and cultural legacy.
What Youll Do

• Oversee the full operation of the restaurant, ensuring five-star service and consistency at every touchpoint.
• Lead the team in delivering the Michelin-star chefs vision through seamless, structured service.
• Implement strong operational systems and SOPs that set the benchmark for luxury hospitality.
• Recruit, train, and inspire a high-performing team committed to delivering personal and world-class service.
• Curate unique "moments of magic" for guests, rooted in the estates identity of heritage, wine, and art.
• Partner with culinary and wine teams to create extraordinary food and wine experiences.
• Drive efficiency, manage budgets, and ensure financial performance.
• Guarantee compliance with health, safety, and five-star operational requirements.

What Were Looking For

• Minimum 3 years experience in a five-star, luxury restaurant or hotel dining environment.
• Strong, structured management style with proven ability to implement and sustain systems.
• Exceptional leadership skills and a track record of building high-performance teams.
• In-depth knowledge of fine dining, wine pairing, and luxury guest engagement.
• Solid organisational and financial management abilities.
• Passion for creating extraordinary guest experiences that combine international excellence with local authenticity.
