  • Professional culinary qualification with a focus on pastry/baking (e.g., City & Guilds, Cordon Bleu, or equivalent).
  • Additional pastry-specific courses/certifications are advantageous.
  • Experience
  • Minimum 23 years experience in a pastry role within a fine dining restaurant, luxury hotel, or 5-star lodge.
  • Experience in creating high-end plated desserts, breads, pastries, and afternoon tea selections.
  • Knowledge of modern pastry trends and techniques.
  • Skills
  • Strong pastry and baking skills, with an eye for detail and presentation.
  • Ability to work under pressure in a busy kitchen environment.
  • Good communication and teamwork skills.
  • Knowledge of food safety, storage, and HACCP compliance.

  • Creativity and passion for pastry arts.
  • High levels of discipline, reliability, and self-motivation.
