Qualifications & Requirements

Minimum 5-7 years of professional culinary experience, with at least 2 years in a Head Chef or Executive Chef role (preferably in a 4-5 star hotel or upscale restaurant). Recognized culinary degree, diploma, or certification. Proven expertise in menu planning, food cost control, and kitchen leadership. Excellent communication, organizational, and leadership skills. Strong knowledge of international cuisines and food trends. Ability to work flexible hours, including weekends, evenings, and public holidays.

Must be eligible to work in South Africa and provide valid work authorization.

Must have reliable transportation and be able to commute to the hotel daily.

Plan, create, and update seasonal and innovative menus aligned with the hotel's positioning and guest profile. Ensure all dishes meet consistent standards of taste, quality, and presentation. Introduce new culinary trends while maintaining authenticity in classic dishes. Oversee day-to-day kitchen operations, including food preparation, cooking, and service. Maintain compliance with hotel standards, HACCP, and food safety regulations. Control portioning, waste, and stock rotation to minimize cost and ensure freshness. Prepare and manage kitchen budgets in collaboration with management. Monitor food cost percentages and take corrective actions where needed. Negotiate with suppliers and ensure the best quality products are sourced cost-effectively. Recruit, train, schedule, and supervise kitchen staff to achieve high performance. Conduct regular briefings, training sessions, and performance reviews. Foster a positive, disciplined, and professional team culture. Enforce strict compliance with health and safety legislation. Ensure cleanliness and organization of all kitchen areas and equipment. Conduct regular audits and implement corrective actions where required.
