This prominent award winning wine estate restaurant in Stellenbosch is a regular recipient on the Trip Advisors Top 10 Peoples Choice Awards. Offering a limited yet eclectic a la carte menu for lunch and dinner, the atmosphere is distinctly fine dining with the focus on innovative & creative modern cuisine. The brigade of 16 chefs support this very demanding kitchen with daily production which offers both indoor and outdoor seating with magnificent views of the winelands.

We are in search of a young and energetic head chef with the capacity to run this demanding kitchen offering very high culinary standards. The suitable applicant will need to have come from a fine dining environment to achieve similar cuisines and level of creativity.

RESPONSIBILITIES:

Manage, direct and control all aspects of food preparation, production and culinary standards
/p
p
Compile, create and implement new menus as required at least twice a year
/p
p
Plan and control orders, equipment and ingredients, receiving and storage
/p
p
Compile weekly GP and cost of sales reports, monitor GP% and create a cost saving culture within the brigade
/p
p
Manage, monitor and train all staff for kitchen hygiene, COVID-19 regulations, food preparation methods and kitchen practices
/p
p
Be fully in charge of all hiring, managing and training of staff including scheduling, assessment, training, discipline of staff and motivation of the team
/p
p
Take on additional sustainability projects and make use of kitchen garden produce as well as foster good relations with suppliers for preferred cost benefits
/p
p
Ensure ongoing culinary production consistency and standards with optimal use of staff resources
/p
p
Control up-to-date & highest levels of cleanliness of kitchen equipment as well as maintenance thereof
/p
p
Short-term and long-term planning in consultation with the General Manager & Owners
