Job Description


Intimate luxury game lodge close to Clanwilliam (3 hrs from Cape Town) is looking for a culinary master passionate about creating exceptional dining experiences, someone who is upcoming, energetic and has fresh ideas to take up the position of Head Chef. We are looking for an Head chef who will be inspired by the beautiful surroundings and abundance of local produce to create a culinary experience equal to the breathtaking views. This is a once-in-a-lifetime opportunity to be part of a kitchen team that is fast becoming known as a food destination. Responsible for:

  • The Head Chef plays a vital role in creating a thrilling and unforgettable dining experience by collaborating closely with the Guest Experience Manager:
  • Menu Creation: Design seasonal menus that showcase local and international cuisine, emphasizing fresh, high-quality ingredients and innovative culinary techniques. In line with the costings and budgets.
  • Budget Management: Manage kitchen expenses, inventory, and budgets effectively, optimizing costs without compromising on quality.
  • Kitchen Management: Oversee all aspects of the kitchen operation, including food preparation, cooking, plating, and presentation. Ensure compliance with hygiene and safety standards.
  • Staff Leadership: Lead, motivate, and mentor kitchen staff, fostering a positive and collaborative work environment. Provide training and guidance to maintain a skilled and cohesive team.
  • Quality Control: Maintain high standards of food quality, taste, and presentation. Conduct regular tasting sessions and implement improvements as necessary.
  • Supplier Management: Build and maintain relationships with suppliers, ensuring the procurement of fresh, seasonal, and premium-quality ingredients.
  • Guest Interaction: Interact with guests to understand their preferences, dietary requirements, and feedback, ensuring a personalised dining experience.
Requirements:
  • At least 2 to 3 years relevant experience
  • Experience in a high-end luxury lodge or the equivalent of a restaurant environment (Boutique, smaller establishments, more intimate would be an advantage)
  • Culinary degree or equivalent qualifications from a recognised institution.
  • Strong creativity and passion for culinary arts, with a focus on diverse cuisines and modern cooking techniques.
  • Exceptional leadership and communication skills, with the ability to inspire and motivate a team.
  • Knowledge of local and international food trends, sustainable practices, and dietary preferences.
  • Ability to work well under pressure and maintain composure in a fast-paced environment.
  • Flexibility to work evenings, weekends, and holidays as required.
