The Jordan Restaurant with Marthinus Ferreira located at Jordan Wine Estate in Stellenbosch, is a signature fine-dining restaurant owned and managed by highly acclaimed Chef Marthinus Ferreira.

We offer the opportunity to a highly experienced and committed individual to join our exceptional team as a General Manager to lead our fine dining establishment to new heights of excellence in customer experience and operations.

Job Summary



The General Manager oversees the daily operations of the fine dining restaurant, ensuring an exceptional guest experience, operational efficiency, and profitability. This leadership role involves managing staff, coordinating with suppliers, maintaining quality standards, and handling administrative duties. The ideal candidate is a dynamic leader with a passion for fine dining, wine expertise, and exceptional organizational skills.

Key Performance Areas (KPAs) and Activities



Day-to-Day Operations Management



- Oversee the opening and closing of the restaurant.- Monitor and ensure smooth daily operations.- Maintain a high standard of cleanliness and organization.

POS System Management



- Implement and maintain the POS system.- Train staff on the system's use and troubleshoot issues as needed.

Team Leadership and Staff Management



- Manage and motivate hostesses, assistant managers, bar staff, and waiters.- Recruit, hire, and train FOH and bar staff.- Conduct performance evaluations.

Customer Relations



- Ensure 100% customer satisfaction by addressing guest concerns promptly.- Foster positive guest relations and manage customer complaints effectively.

Quality Assurance



- Maintain consistent food quality and presentation.- Conduct regular checks to ensure products meet company standards.

Staff Scheduling and Training



- Prepare and manage shift rosters.- Train and mentor FOH staff to deliver exceptional service.- Conduct regular staff meetings to communicate goals.

Wine Program Development



- Develop and update the wine list.- Meet with wine representatives to stay informed on new offerings.

- Design and organize wine tastings for guests.

Event Management



- Assist with planning and facilitating private events and functions.- Coordinate with staff to ensure flawless execution of events.

Administrative and Financial Management



- Manage petty cash, cash-ups, payments, and financial reports. Extract working hours and overtime from the biometrics system for payroll and communicate tips payments.

- Handle general administration, including menu changes and website updates.- Monitor inventory and place orders.

Menu and Marketing Coordination



- Collaborate with the kitchen team on menu updates and seasonal changes.

- Update the website with new menus and promotions.- Coordinate marketing efforts.

Problem Solving and Innovation



- Address operational issues quickly and effectively.

- Innovate processes to enhance guest experiences and operational efficiency.

Required Competencies



Leadership Competencies:



Ability to lead and inspire a team toward achieving restaurant goals. Exceptional interpersonal and conflict resolution skills. Decision-making under pressure and in fast-paced environments.

Operational Competencies:



Strong understanding of restaurant operations, including FOH and BOH coordination. Proficiency in managing POS systems and restaurant technology. Knowledge of food safety and hygiene regulations.

Wine and Culinary Knowledge:



Extensive knowledge of wine pairing, trends, and wine list management. Familiarity with fine dining culinary standards and menu design.

Financial and Administrative Competencies:



Proficiency in budget management, financial reporting, and inventory control. Ability to organize schedules, events, and daily tasks efficiently.

Skills and Attributes



Key Skills:



Strong communication and public relations skills. Advanced problem-solving and organizational abilities. Proficiency in office software and restaurant management tools.

Personal Attributes:



Professional appearance and demeanor. High level of attention to detail and commitment to excellence. Creative and resourceful with a passion for fine dining.

Qualifications:



Minimum of 5 years' experience in restaurant management, preferably in fine dining. Certification in hospitality management or equivalent experience. Proven expertise in wine and menu development with a Sommelier certification Valid driver's license and reliable transportation.

Key Performance Indicators (KPIs):



Customer satisfaction scores and feedback. Staff performance, retention, and training completion rates. Achievement of financial goals, including profitability and cost control. Consistency in food and service quality. Success in event organization and wine program development.

Work Environment:



Fast-paced fine dining environment. Requires evening, weekend, and holiday shifts.
