We are a

high-volume, well-established restaurant, deli and on-site sourdough bakery

with

27 years of successful trading

. We are appointing an

Executive Chef

to take

full operational responsibility

for the kitchen and all production areas.

This is a

7-day-a-week operation

with

long hours and high responsibility

. The role is suited to a

disciplined, highly organised leader

who understands the demands of a fast-paced, production-heavy environment and can manage a large brigade consistently and firmly.

This is

not a creative menu-development role

. It is a

systems-driven, management-focused position

.

Role Overview

You will be responsible for the

day-to-day management, organisation and performance

of:

The main kitchen Deli take-away production On-site sourdough bakery

Fresh juice, smoothie and cut-fruit sections


Managing approximately

30 kitchen staff

, you will be accountable for structure, consistency, controls and standards across all areas.

Key Responsibilities

Daily production planning using

pars, production sheets and checklists

Ordering, stock control, wastage management and food cost control Recipe documentation with

accurate costings and taste profiles

Ensuring consistent food quality, portion control and presentation Staff leadership: scheduling, training, discipline and accountability Enforcing hygiene, food safety and cleanliness standards Hands-on operational leadership in a

fast-paced, high-volume kitchen

Reporting to senior management
Menu & Food Focus

The business operates with a

long-standing, much-loved menu

.
The focus is on:

Executing the existing menu to a consistently high standard Refining and tweaking where necessary Protecting flavour integrity and brand consistency
Ideal Candidate

Proven experience as an

Executive Chef or Senior Head Chef

Strong organisational, leadership and people-management skills Comfortable managing

long hours, large teams and high production volumes

Highly disciplined, structured and detail-oriented Food cost driven with strong operational control Hands-on, present and accountable
