)POSITION: PermanentCOMMENCEMENT: ASAPPURPOSE OF POSITION:This upmarket Japanes restaurant is looking for a Sushi Chef to work alongside the Head Chef to manage food stock and handle a wide range of ingredients, with attention to detail to fulfill quality standards.MINIMUM REQUIREMENTS:

• Matric
• Culinary Diploma (preferred)
• Must have experience with Japanese cuisine
• Preferably +/- 4 years previous experience in a senior chef role
• Good knowledge of various sushi types and sushi-rolling techniques
• Own transport with valid driverxe2x80x99s license
• Basic computer skills (word, excel, outlook)
• Availability to work within opening hours (e.g. evenings, public holidays, weekends)
• Outstanding communication skills (verbal and written) fluent in English.

KEY PERFORMANCE AREAS:

• Creating & preparing a rich sushi menu with various main ingredients and raw fish (for example, salmon, tuna, unagi).
• Prepare appetizers, soups and salads that are close to the philosophy of Japanese cuisine.
• Manage and lead the kitchen staff in head chefxe2x80x99s absence.
• Coordinate with our wait staff to ensure proper cooking, considering special requests and food allergies.
• Provides guidance & training to junior kitchen staff members, including but not limited, to line cooking, food preparation and dish plating.
• Supervises all food preparation and presentation to ensure quality and restaurant standards.
• Oversee and organizes kitchen stock and ingredients, including proper dating and quality assurance.
• Improve waste reduction and manage budgetary concerns.
• Works with head chef to maintain kitchen organization, staff ability and training opportunities.
• Monitor and maintain hygiene and health and safety principles.
