Job Description


We are looking for a talented and experienced Sous chef, with previous expeeince in a high pressured enviroment. Please note that this position is located in Mpumalanga and is a single live in position. You must be willing to relocate as well as work in shift cycles. EG 6 weeks on 2 weeks off.

Key Duties and Responsibilities:

  • Assist the Head Chef in the development and planning of menus, considering seasonal availability and guest preferences.
  • Ensure the highest levels of quality, presentation, and creativity are met in every dish served.
  • Lead, mentor, and manage kitchen staff, promoting a culture of excellence, teamwork, and continuous improvement.
  • Maintain strict adherence to food safety and hygiene standards according to health and safety regulations.
  • Efficiently manage food inventory, procurement, and cost controls without compromising on quality.
  • Collaborate with the Head Chef to create innovative dishes and enhance the dining experience, incorporating local flavors and ingredients unique to [Location].
  • Act as the Head Chef in their absence, ensuring seamless kitchen operations.
  • Engage with guests to receive feedback, accommodate special requests, and ensure a memorable dining experience.
  • Stay abreast of culinary trends and techniques, integrating them where appropriate to enhance the lodge's dining offerings.
Qualifications:
  • Culinary arts qualification from a reputable institution.
  • A minimum of 3-5 years of culinary experience, with at least 2 years in a leadership role within a fine dining or 5-star hospitality environment.
  • Demonstrated experience in menu development and a deep understanding of various cooking methods, ingredients, equipment, and procedures.
  • Strong leadership skills with a proven ability to manage, motivate, and develop a high-performing kitchen team.
  • Excellent organizational and time management skills, with the ability to work well under pressure in a fast-paced environment.
  • A passion for culinary excellence, creativity, and innovation.
  • Knowledge of local cuisine and ingredients is highly desirable.
  • Proficiency in food safety and sanitation regulations.
