Kendrick Recruitment is seeking a skilled and passionate Sous Chef to join a prestigious luxury private reserve located in the Kalahari. This live-in position offers a negotiable salary, dependent on experience, and provides the opportunity to work in a dynamic and high-end hospitality environment.
Requirements:
Minimum of 2 years' experience as a Sous Chef in a 5-star establishment
Food hygiene and professional cooking qualifications
Proven ability to perform in a busy, fast-paced kitchen
Strong multitasking skills with the ability to work efficiently under pressure
Experience in coordinating a kitchen team to deliver menus and dishes with precision and high presentation standards
Excellent understanding of current food trends
Knowledge of dietary and religious requirements
Strong grasp of creating, implementing, and maintaining standard operating procedures
Sound knowledge of stock management and control
Competence in planning, budgeting, and departmental administration
Key Responsibilities:
Mentor, train, and manage the kitchen team, ensuring continual improvement and development
Systemise and streamline kitchen operations, including stock control, food preparation, presentation, timely service, and wastage reduction
Compile and implement seasonal menus aligned with the property's culinary standards
Maintain and exceed standards of food hygiene, cleanliness, and handling in compliance with legislation
Lead and train staff in line with the property's food directive, ensuring all dishes are prepared to the highest standard
Oversee kitchen administration, ensuring effective stock control and minimising shortages, wastage, and variances
Monitor and manage kitchen costs, implementing effective measures for control
