Reports to: Executive Food & Beverage Manager About the Role We are seeking a seasoned Restaurant Manager to lead the dining operations of a prominent luxury boutique hotel & manor house in Cape Town. You will be responsible for maintaining the restaurant's identity, elevating guest experience, and driving operational excellence, while aligning with the hotel's brand, culture, and food & beverage vision. Key Responsibilities Strategic & Brand Leadership Deeply understand the restaurant's concept, positioning, and F&B offerings Translate the brand vision into daily operations and guest interactions Communicate expectations and standards clearly to the team Guest Experience & Service Excellence Ensure every service is memorable and brand-consistent Handle guest bookings, special requests, and bespoke dining arrangements Coordinate event and group dining functions, liaising cross-departmentally Team Leadership & Training Train; coach and mentor the service team (SOPs, wine service, operational systems) Conduct daily briefings and ensure strong internal communication Uphold grooming/uniform standards and high professional conduct Operations; Systems & Administration Oversee FOH systems: Micros Symphony (POS), Dineplan (reservations), and timekeeping Create; manage, and reconcile beverage and operating equipment stock takes Support budgeting, cost control, and financial oversight with the F&B Manager Identify operational issues and liaise with BOH/management to resolve Health; Safety & Quality Maintain consistent hygiene, cleanliness, and safety standards Monitor protocols, guest areas, and staff compliance Required Skills & Competencies Deep operational understanding of fine-dining restaurant service and daily workflows Strong wine knowledge: pairings, service, cellar practices Leadership skill with ability to inspire, develop, and hold team accountable Excellent written & verbal communication Proficient in Micros Symphony, Dineplan, timekeeping, stock management systems Financial acumen: budgeting, cost control, expense monitoring Highly organized, detail-orientated, and able to multitask under pressure Genuine passion for guest service, elegance, and hospitality professionalism Preference for Cape Town based candidates Must be eligible to work in South Africa Qualifications & Experience (Preferred) 3-5 years in a leadership role at a high-end, boutique hotel or similar restaurant Formal qualification in Hospitality Management or related field advantageous Sommelier training or equivalent wine service qualifications preferred Package & Benefits R30;000 per month (DOE) Live-out role Opportunity to work within a refined, high-style boutique environment Growth potential within the F&B division ?
