Supervise and coordinate butchery staff, ensuring work is carried out according to production schedules.
Monitor workflow, throughput, and productivity to meet daily/weekly targets.
Ensure correct handling, cutting, portioning, and packaging of meat products.
Control stock movements in and out of the butchery, ensuring accuracy and traceability.
Oversee recipe adherence, block balancing, and correct application of cutting specifications.
Quality & Compliance
Enforce hygiene and sanitation standards in line with HACCP, ISO, and food safety regulations.
Conduct regular checks to ensure product quality, labeling accuracy, and compliance with customer specifications.
Ensure proper handling of voids, reworks, and waste management.
Investigate and resolve quality or production issues promptly.
People Management
Train, guide, and supervise butchery operators, cutters, and packers.
Allocate daily tasks and manage shift planning.
Enforce discipline, monitor attendance, and ensure compliance with health & safety rules.
Motivate staff to achieve productivity and quality goals.
Reporting & Administration
Maintain accurate production and stock records.
Report on variances, yields, and losses, highlighting potential cost-saving opportunities.
Monitor equipment functionality and escalate maintenance issues.
Support audits and provide documentation for traceability and compliance purposes.
Skills & Competencies
Strong knowledge of butchery processes, meat cuts, yields, and processing methods.
Ability to manage workflows, staff, and multiple priorities under pressure.
Strong communication, leadership, and problem-solving skills.
Computer literacy (Excel, production software, Meat Matrix systems).
Qualifications & Experience
Grade 12 / Matric (essential).
Diploma or certificate in Food Technology, Meat Processing, or related field (advantageous).
Minimum 3-5 years' supervisory experience in a butchery or meat processing environment.
Proven experience in yield management, recipe control, and traceability.

Working Conditions
Cold storage/butchery environment with strict hygiene controls.
Shift work and weekend availability may be required.
Physically demanding role (standing for long periods, handling meat products).
