Job Description


Job Purpose:To prepare and cook authentic Neapolitan-style pizzas in a traditional wood-fired oven, following time-honored methods that prioritize quality ingredients, hand-crafted dough, and high-heat baking.Key Responsibilities:

  • Prepare high-hydration dough using natural fermentation (24-72 hours)
  • Hand-stretch dough to traditional Neapolitan standards (no rolling pins)
  • Operate and maintain a wood-fired pizza oven (450-500xc2xb0C)
  • Source and use authentic ingredients such as San Marzano tomatoes, mozzarella di bufala/fior di latte, and fresh basil
  • Assemble pizzas with precision and consistency
  • Maintain a clean, organized pizza prep and cooking station
  • Ensure pizzas meet quality and presentation standards at all times
  • Collaborate with kitchen team for prep work and service coordination
  • Adhere to food safety, hygiene, and workplace safety regulations
Requirements:
  • Proven experience as a Neapolitan pizza chef or trained pizzaiolo
  • Deep knowledge of traditional Neapolitan pizza-making techniques
  • Ability to work in a high-heat, fast-paced environment
  • Skilled in working with wood-fired ovens and dough fermentation
  • Strong attention to detail and commitment to product quality
  • Flexible with work hours, including weekends and evenings
lifications:
  • Certification from AVPN (Associazione Verace Pizza Napoletana) or similar
  • Experience in Italian or specialty pizzerias
Basic knowledge of Italian culinary terminology and food handling practices
