Key Responsibilities
Prepare and maintain pizza dough from scratch daily, including mixing, bulk fermentation, portioning, proofing, and hand-stretching.
Operate and manage a wood-fired oven, including firing, temperature control, and even heat management.
Hand-stretch pizzas to required New York-style thin crust dimensions and maintain consistency of size and quality.
Apply toppings with precision, ensuring balance, flavour harmony, and portion control.
Maintain high standards of food safety, hygiene, and kitchen organisation.
Collaborate with the kitchen team to ensure smooth service and efficient workflow.
Assist with stock rotation, ordering, and ingredient quality checks.
Uphold brand standards and contribute to menu development where required.
Skills & Requirements
Minimum
3 years' experience
as a Pizzaiolo or pizza chef in a professional kitchen.
Proven skill in dough fermentation, hydration ratios, and New York-style hand-stretching techniques.
Strong ability to manage a
wood-fired oven
with confidence and accuracy.
Knowledge of food safety, HACCP standards, and best kitchen practices.
Good communication skills and ability to work under pressure in a fast-paced environment.
Passion for consistency, attention to detail, and pride in craft.
