The Restaurant & Guest Lodge Operations Manager is responsible for overseeing the day-to-day operations of a
small, boutique guest lodge and on-site restaurant
. This is a hands-on role requiring strong operational leadership, financial control, exceptional guest experience management, and continuous process improvement. The role focuses on efficiency, quality, and personalised hospitality rather than large-scale hotel operations.
Manage all food and beverage ordering for the restaurant and guest lodge
Maintain accurate inventory control, tracking, and stock rotation
Implement waste-reduction strategies to optimise costs and sustainability
Manage supplier relationships, pricing, and delivery standards
Kitchen Management
Ensure recipe standardisation and consistent food quality
Oversee food preparation and cooking standards
Maintain kitchen hygiene, safety, and compliance
Coordinate equipment maintenance and preventative servicing
2. Front-of-House & Guest Operations
Oversee daily restaurant service and guest lodge interactions
Manage table flow and service efficiency
Oversee Uber Eats and delivery platform order management
Ensure seamless coordination between kitchen, service staff, and delivery platforms
Deliver a warm, personalised, and community-focused guest lodge experience
3. Financial Management
Budgeting & Forecasting
Prepare and manage operational budgets appropriate for a small guest lodge
Conduct sales forecasting and performance planning
Track daily, weekly, and monthly performance
Financial Reporting & Analysis
Maintain and analyse GAAP Sales Dashboard and Uber Eats Dashboard
Prepare clear operational and financial reports using
Microsoft Excel
Present performance updates and insights using
PowerPoint
Cost Control
Control food, beverage, and overhead costs
Identify and implement cost-saving initiatives
Cash Flow Management
Oversee accounts receivable and payable
Ensure accurate cash handling and financial security
4. Customer Service & Guest Experience
Guest Experience
Create a positive, personalised dining and accommodation experience
Handle guest complaints and feedback professionally and efficiently
Build customer loyalty and repeat business
Technology
Ensure effective use of POS systems and operational tools
Maintain accurate digital records and reporting
Sustainability
Implement waste reduction, recycling, and environmentally responsible practices
5. Employee Development & Leadership
Recruit, train, and manage restaurant and guest lodge staff
Implement structured training and development programmes
Support career growth and performance management
Drive team engagement through recognition and rewards
6. Process Improvement
Identify operational gaps across restaurant and guest lodge functions
Design and implement practical solutions to streamline operations
Develop and maintain SOPs and operational documentation
Use

Key Skills & Competencies
Proven experience in restaurant, cafe, guest lodge, or boutique hospitality operations
Strong financial acumen and cost-control capability
Proficiency in
Microsoft Excel, PowerPoint, and basic computer systems
Ability to analyse data and present insights clearly
Hands-on leadership style suited to a small-team environment
Strong organisational and problem-solving skills
Customer-focused with a passion for personalised hospitality
Preferred Experience
Experience in small guest lodges, boutique hotels, hostels, or cafes
Familiarity with Uber Eats or similar delivery platforms
Experience with GAAP, POS systems, and inventory management software
Exposure to sustainability initiatives in hospitality
Job Type: Full-time
Pay: R12500,00 - R20000,00 per month
