Hygiene Manager

Job Description

We're seeking a meticulous and proactive hygiene manager to champion food safety and sanitation excellence across our operations. You'll play a critical role in protecting the health and well-being of our guests and team members by maintaining the highest hygiene standards and ensuring compliance with all food safety regulations.
Key Responsibilities
Standards & Compliance

  • Establish, implement, and maintain minimum hygiene and sanitation standards across all work areas, stores, receiving areas, and disposal zones.
  • Monitor and enforce all procedures and protocols to maintain an exceptional sanitation environment.
  • Ensure all food served is free from microbiological, chemical, and physical contamination.
  • Maintain comprehensive knowledge of kitchen hygiene practices and occupational health and safety standards.
Documentation & Record Management
  • Maintain accurate and efficient records of all sanitation and hygiene programs.
  • Develop and update a methodology manual that is readily accessible for section personnel.
  • Generate detailed reports following monthly sanitation inspections.
Inspections & Audits
  • Serve as a key member of the Hotel's sanitation team.
  • Conduct monthly sanitation inspections throughout all food handling areas.
  • Chair and conduct Food Safety Standards (FSS) Monthly Meetings.
  • Ensure compliance with GMP, HACCP, ISO 22000, ISO 9001, OHSAS 18001, and ISO 14001 standards.
Collaboration & Communication
  • Liaise continuously with external agencies including laboratories, government bureaus, and health practitioners on sanitary matters.
  • Promote effective communication and coordination with hotel staff on hygiene matters.
  • Build strong relationships with team members at all levels.
Leadership & Development
  • Train and motivate team members on food safety and hygiene practices.
  • Equip staff to achieve predetermined hygiene goals through appropriate empowerment programs.
  • Nurture and develop team members, encouraging innovation in sanitation practices.
Administrative
  • Maintain a clean, orderly office with organized and efficient workflow.
  • Complete special assignments and projects as directed by management.
Essential Requirements
Experience & Qualifications
  • Minimum 2-3 years of experience as a hygiene manager in a hotel or large restaurant complex.
  • Bachelor's degree in food science.
  • Hotel industry experience is strongly preferred.
  • Proven experience delivering skills training.
Certifications (Required)
  • GMP (Good Manufacturing Practice)
  • HACCP (Hazard Analysis and Critical Control Point)
  • ISO 22000 (Food Safety Management System) / Quality Management System ISO 9001
  • OHSAS 18001 (Occupational Health and Safety Management System)
  • Train the Trainers - Facilitator certification
  • Environment Management System ISO 14001
