Job Duties & Responsibilities
Provide strong leadership to effectively manage all kitchen departments.
Ensure smooth communication and cooperation between Back of House and Front of House teams.
Delegate and assign daily food preparation tasks while maintaining consistent quality.
Follow instructions and recommendations from Executive Management to complete daily, weekly, and monthly objectives.
Work, train, and manage all sections of the kitchen, including Hot, Cold, and Pastry.
Coordinate daily tasks with the Sous Chef and other senior kitchen staff.
Accurately estimate daily production needs; inspect and ensure quality of raw and cooked products.
Develop new recipes and menu concepts aligned with the restaurant's style.
Ensure that food production, preparation, and presentation consistently meet premium standards.
Maintain high levels of guest satisfaction, food quality, and cost control.
Oversee ordering, stock levels, monthly stock takes, and accurate stock input.
Uphold all procedures related to food preparation, receiving, storage, and sanitation.
Update recipe cards and accurately cost all menu items.
Maintain full knowledge of all menu items, production methods, and presentation standards.
Follow best practices for food preservation, handling, temperature control, and hygiene.
Operate and maintain all kitchen equipment; report any malfunctions immediately.
Ensure a safe, clean, and positive working environment.
Uphold strict hygiene and safety standards and ensure the team does the same.
Work efficiently to meet deadlines and support staff in achieving theirs.
Regularly check expiry dates, storage conditions, FIFO processes, and correct stock rotation.
Communicate daily with Restaurant Managers and the Executive Chef regarding requirements, functions, and last-minute changes.
Guide, train, and motivate staff to maintain high performance and cost-effective operations.
Set an example for excellent personal hygiene and professionalism at all times.
Provide daily feedback and report issues as they arise.
Continuously monitor quality control and ensure adherence to service standards.
Perform any additional duties assigned by management.
Requirements
2-4 years' experience
in a similar Head Chef or Senior Chef role.
Ability to work
day shifts, night shifts, and double shifts
when required.
Strong leadership, communication, and organisational skills.
High level of culinary knowledge across all kitchen sections.
Ability to thrive in a fast-paced, high-pressure environment.
Additional Requirements
Ability to commute reliably to Cape Town City Centre.
Own transport and a valid driver's license preferred.
Must relocate to Cape Town, Western Cape, if currently based elsewhere.
