to lead the kitchen of an upmarket, fast-paced restaurant located in Cape Town City Centre.
Key Responsibilities:
Provide
strong leadership
across all kitchen departments, ensuring high performance and team motivation.
Maintain
effective communication
between Back of House (BOH) and Front of House (FOH) teams to guarantee smooth daily operations.
Delegate and manage
daily food preparation duties, ensuring consistent quality and timely service.
Coordinate daily operations with the
Sous Chef and senior kitchen staff
.
Work confidently across all kitchen sections -- hot, cold, and pastry.
Oversee and contribute to the
development of new recipes and menu items
in line with the restaurant's concept and standards.
Manage
quality control
, from raw product checks to final plate presentation.
Monitor stock levels
, perform monthly stock takes, and ensure accurate input and management of inventory systems.
Ensure
strict adherence to hygiene, health and safety regulations
, and proper food handling standards.
Train, guide and mentor kitchen staff; lead by example in terms of hygiene, professionalism, and work ethic.
Liaise daily
with the Executive Chef and Restaurant Managers regarding operational needs and upcoming events.
Maintain cost controls
and assist in recipe costing, standardization, and updating of recipe cards.
Uphold FIFO (First-In, First-Out) and stock rotation procedures at all times.
Conduct periodic audits for expiry dates, equipment functionality, and cleanliness.
Requirements:
Minimum
2-4 years' experience
as a Head Chef or Senior Sous Chef in an upmarket or fine-dining environment.
Proven ability to
manage a busy kitchen team
while maintaining top-quality food standards.
Exceptional knowledge of
food production techniques, kitchen operations, and sanitation standards
.
Strong understanding of
inventory control, food costing, and menu planning
.
Ability to perform under pressure, meet deadlines, and adapt to last-minute changes.
Excellent planning, organizational, and communication skills.
Additional Information:
Shifts include day, night, and double shifts.
Immediate start preferred.
Own transport and valid driver's license preferred.
Must be able to
relocate to Cape Town, Western Cape
if not already based in the area.
