Salary: R25,000 - R28,000 per month (DOE) ? Accommodation: Live-in, meals on duty Position Overview A prestigious 5-star safari lodge in Madikwe is urgently seeking an experienced and highly skilled Head Chef to oversee and manage the operations of multiple lodge kitchens . This is not a standard Sous Chef stepping-up role - the property requires a proven culinary professional with the leadership, organisational ability, and administrative expertise to deliver consistently at a luxury standard. The successful candidate will balance creativity and quality on the plate with the ability to manage stock, budgets, staff training, and seamless kitchen administration across five kitchens. Key Responsibilities Lead and inspire the kitchen brigade, ensuring consistent delivery of luxury-standard cuisine. Oversee and coordinate operations across multiple kitchens simultaneously. Menu planning, seasonal innovation, and costed recipe development. Ensure precise portion control, plating standards, and consistency across all outlets. Maintain strong kitchen administration, including stock control, purchasing, and supplier management. Conduct regular stocktakes, costings, and kitchen financial reporting. Enforce hygiene, safety, and HACCP standards across all kitchens. Mentor; train, and upskill junior chefs while maintaining a motivated team culture. Work closely with lodge management to ensure dining experiences exceed guest expectations. Minimum Requirements Proven experience as Head Chef (not Sous stepping up) in a 5-star safari lodge or luxury hotel environment. Minimum of 5+ years' experience at Head chef level in high-end luxury lodges. Strong administrative and kitchen management skills (stock control, ordering, supplier management, budgeting). Demonstrated ability to manage multiple kitchens simultaneously . Passion for innovative, sustainable, and guest-focused cuisine. Excellent leadership and communication skills, with the ability to inspire and develop teams. Knowledge of dietary requirements and flexibility in menu adaptations. Valid driver's license and willingness to live on-site in a remote location. Package & Benefits Salary: R25;000 - R28;000 per month (dependent on experience).
