Job Summary
Key Responsibilities
Operational Excellence

  • Analyse current F&B operations across the hotel and fine dining restaurant and implement improved systems, workflows, and best practices in line with international 5-star standards.
  • Conduct full assessments of service delivery, menu execution, guest flow, back-of-house operations, and staff performance.
  • Develop and implement SOPs for all areas of F&B, ensuring consistency, professionalism, and operational clarity.
Quality & Guest Experience Enhancement
  • Elevate the guest experience through refined service rituals, storytelling, personalised touches, and sensory-driven dining moments.
  • Collaborate with culinary and service teams to ensure flawless execution of standards.
  • Conduct regular service audits and introduce corrective actions or training interventions as required.
Concept Development & New Openings
  • Lead or support the conceptualisation, planning, and successful launch of new F&B outlets or hotel expansions.
  • Develop opening-critical paths, service concepts, menu direction, layout suggestions, and staff planning for new venues.
  • Draw on previous opening experience to ensure operational readiness from Day 1.
Training & Staff Development
  • Mentor, coach, and train staff at all levels to achieve superior guest service, product knowledge, and service finesse.
  • Design and deliver training sessions for service excellence, fine dining etiquette, beverage mastery, upselling, and guest engagement.
  • Identify talent gaps and assist in building a high-performing F&B team.
Menu & Beverage Programme Support
  • Collaborate with the Executive Chef and Bar Manager to refine menu offerings, ensuring they meet luxury dining expectations.
  • Assist in creating beverage pairings, wine list improvements, signature cocktails, and non-alcoholic experiences that elevate the brand.
  • Monitor quality, cost efficiency, and guest feedback to maintain relevance and excellence.
Financial & Performance Management
  • Analyse revenue streams, cost structures, wastage, and pricing to optimise profitability without compromising quality.
  • Support inventory control, supplier management, and forecasting.
  • Contribute to F&B budgeting with a focus on growth, innovation, and sustainability.
Brand & Standards Alignment
  • Ensure all F&B experiences reflect the values, pillars, and identity of the Morea House brand.
  • Maintain strict compliance with hygiene, safety, and luxury hospitality standards.
  • Encourage a culture of excellence, accountability, and continuous improvement.
Required Experience & Qualifications
  • Minimum 5-7 years' experience in luxury hotel F&B management or specialist consultancy roles.
  • Proven track record of supporting or leading new hotel and outlet openings.
  • Deep understanding of fine dining, premium guest service, wine service, luxury beverage programmes, and industry trends.
  • Strong training, leadership, and coaching skills with the ability to inspire teams.
  • Exceptional communication and guest engagement skills.
  • Certifications in hospitality management, food service, wine, or related fields (advantageous).
