Job Description


Qualifications/Experience:

  • Diploma in Marketing, Hospitality, or equivalent.
  • 3 5 years experience in a high-volume hotel operation with a strong focus on events.
  • Competence in Microsoft Office Suite, Opera PMS sales, and catering and POS systems.
Responsibilities/Duties:
  • To plan, organize, delegate, and control all the activities of the food and beverage department including restaurants, bars, events, and in-room dining.
  • To analyze weekly occupancy and event forecasts and to ensure each outlet is staffed and resourced appropriately in terms of operating equipment required.
  • To communicate the overall hotel budgeted income and expenses with food and beverage management and ensure that each outlet receives a breakdown of their required revenue targets and expense control sheets.
  • To conduct daily, weekly, monthly, and quarterly stocktakes for food, beverage, guest and cleaning supplies and operational equipment.
  • To check daily food and beverage revenue reports and cash-ups to ensure accuracy in terms of both revenue and daily banking and that accounting standard operating procedures are met and maintained.
  • Ensure the full F&B department and all its outlets remain properly stocked to meet set par stock levels and in line with weekly forecasts.
  • To create, implement, and manage a staff training and development program for the food and beverage department and all its outlets with the assistance of the HR department.
