Looking for a well-rounded, experienced Executive Sous Chef for an upmarket restaurant group based in Cape Town City Centre. Job Duties & Requirements: Restaurant Group is seeking passionate, dedicated Executive Sous Chef to join a growing group of restaurants in the heart of the city centre. The ideal applicant must be a creative individual who has a good understanding of growing teams and developing staff from within. You will be partnering with the Executive Chef & Group Head in running daily operations in the group. This will be dealing with the Head chefs of their respected restaurants, making sure SOP's are being followed and working closely with the Executive chef in all aspects of the business such as inspecting dishes before they arrive to our customers ensuring high quality of food/hygiene. Key Responsibilities

  • Develop and execute the Kitchen divisional strategy, aligning it with the overall business priorities.
  • Oversee the entire Kitchen operation, including restaurant, room service, and conferencing & events operations.
  • Create innovative menus and deliver exceptional dining experiences that delight guests.
  • Manage the kitchen budget, driving sales targets and controlling costs to ensure operational profitability.
  • Collaborate in planning food menu offerings, promotions, and events, staying up-to-date with market trends and culinary influences.
  • Estimate food consumption, handle food requisition or purchase, and ensure proper stocking of kitchen stations.
  • Set and maintain high kitchen service standards.
  • Train and develop staff to provide world-class service to our guests.
  • Lead and inspire a large team, fostering teamwork, accountability, and staff engagement and retention.
  • Manage staff processes, including recruitment, performance evaluation, and adherence to conduct standards.
Requirements
  • Matric qualification (or equivalent)
  • Relevant tertiary qualification from a recognized South African or International Educational Institution (advantageous)
  • Minimum of 2 years' experience as a Head Chef or 5 years as an Executive Sous Chef in a busy, high-demand environment.
  • Demonstrated experience in a leadership role.
  • Strong operational background in Kitchen management, including budgeting, expense control, workforce planning, rostering, training coordination, stock monitoring, recruitment, supplier management, administration, hygiene, and pest control at a senior level.
  • Available to work day, night and double shifts as required.
