Job Description

We're looking for an experienced individual who can run a busy 100-seater hotel restaurant and four busy conference venues. Our 60-bedroom hotel is popular with corporate guests as well as Leisure.

Responsibilities:



Ensure that all company policies, procedures and standard operating procedures are adhered to

Maintain a food cost of 39%.

Ensure that the preparation, cooking & preparation of all meals are of the company standard.

Work towards exceeding customers' expectations by encouraging & promoting high level of service and food quality.

Ensure that all complaints, queries & suggestions by customers are attended to accordingly

Regular updating of menus to ensure freshness, seasonal appropriateness. Our A la Carte menu is changed twice a year to accommodate summer and winter.

Ensure that work areas are always kept clean, including storage facilities.

Management of staff profiles, development plans, training and disciplinary procedures.

Hold daily meetings with the kitchen team to ensure communication is effective & all kitchen issues are addressed

Promote good team spirit and ensure cohesiveness in the kitchen brigade.

Ensure that all kitchen staff consistently adhere to uniform, grooming and health & safety standards as per HACCP

Timeous submission of daily, weekly & monthly reports as required by company policy.

Control costing of food produce and can cost menu items.

Work closely with the Cost Controller and Food and Beverage Manager to ensure a successful department performance.

Control staff meals and wastages according to the hotel budget.

OE Control and spend according to the hotel budget.

Attend function and management meetings to ensure effective communication is upheld.

Applicant Requirements:



Proven Chef experience within a 3/4-star hotel. Senior chef position experience for at least 5 years. Chef diploma or equivalent will be an advantage A la carte, Set menu and Buffet service experience required Physically able to work shifts at the pace that demand requires Ability to work flexible hours, weekends, night shifts & public holidays Computer literate. Sober habits and able to produce police clearance. 3 contactable references. South African citizen.
