Job Description

MalaMala is looking for a passionate and talented Executive Chef with exceptional culinary skills and strong leadership skills to join the Kitchen team. The successful incumbent will lead a team of skilled chefs and kitchen staff, fostering a collaborative environment that encourages creativity and excellence.

Duties & responsibilities include:

Oversee all culinary operations, including menu planning, food preparation, and kitchen management.

Collaborate with other teams to provide exceptional dining experience for guests

Maintain the highest standards of food quality

Ensure food safety and hygiene

Manage staff

conduct regular stock-takes, order, and replenish all bars and cellars from the liquor store at main camp whilst ensuring all associated paperwork is promptly and accurately completed.

To manage stock, including orders, receiving and stock takes.

Manage employee relations and conduct training on all kitchen operations.

Develop menus where required.

Qualifications and experience

Matric

A formal or tertiary culinary qualification is essential.

Proven experience as an Executive Chef in a 5-star safari-camp/lodge kitchen

Extensive culinary experience, including menu planning and food preparation

Excellent knowledge of food safety and sanitation standards.

Use of Microsoft office (Word, Excel, Outlook) and stock control systems.

Able to work effectively in any section of the kitchen

Must have extensive knowledge of product quality and all dietary requirements

Able to source and utilize local ingredients

Always look neat and presentable when guest facing
