Job Summary 5-Star Big5 ?Game Lodges and in need of Experienced Executive Chefs Professional Cookery/ Culinary Arts diploma from a reputable hotel school. Minimum 5-7 yrs experience as an Executive Chef in a 4 or 5-star lodge/hotel establishment, with a solid track record Valid Food Safety/Hygiene Certificate (HACCP knowledge essential). Multiple outlet management experience essential In depth knowledge of food costing, cost control, waste reduction and ordering efficiency. Menu Design and Costing for lodge dining (bush breakfast, boma dinners, fine dining plating) Excellent understanding of the latest food trends and concepts. Attention to detail and maintaining a guest centric approach Ability to drive change and to look for operational efficiencies / synergies. Highly presentable with excellent communication skills and balanced emotional intellect. Valid RSA ID and Driver's License essential (own vehicle beneficial)
