Job Description

Fountains Hotel on behalf of Indalo Hotels and Leisure is looking for Chef de Parties to assist the Head Chef in running the culinary operations of a kitchen, ensuring high-quality food preparation, and maintaining exceptional standards of hygiene and efficiency.

This role encompasses food preparation, and maintaining exceptional standards of food preparation, food storage, and inventory management, and ensuring they work in a professional way. The Chef de Partie will supervise Commis Chefs and Scullers, providing training and support to maintain teamwork and productivity.

DUTIES AND RESPONSIBILITIES



FINANCE:



Assist in managing the rostering and timekeeping of Commis Chefs and Scullers. Monitor stock levels for service and control the use of food, thus limiting any losses. Manage the control of waste and operating costs. Assist with the 10, 20 and month end stocktakes.

CUSTOMER:



Maintain high standards of customer service and hospitality. Produce all menu items according to the recipe cards. Be an ambassador of the restaurant, check frequently on guest feedback of meals provided. Handle customer complaints and resolve issues promptly and professionally.

PROCESSES:



Always follow all SOPs and Recipe Cards. Attend handover meetings upon arrival for shift and then at shift change. Conduct regular checks of Fridges, Freezers and storage areas to ensure food is stored safely and following LIFO rules. Ensure compliance with health, safety, and hygiene regulations.

PEOPLE:



Ensure a high level of teamwork within the kitchen brigade. Comply with grooming standards, hygiene practises, PPE, Company dress and uniform code. Ensure you clock in upon arrival and clock out upon departure, of each shift. Maintain a high level of communication with all team members - Kitchen, bar and restaurant.

QUALIFICATIONS



Minimum Experience



Minimum 3 years' experience as a Chef de Partie within a single-standing restaurant or chain of restaurants, providing upmarket dining experiences including 1 year in a supervisory role. Good understanding of food and Health and safety practises. Good understanding of relevant computer programmes (MS Office, POS, Inventory Management) Up to date with culinary trends.

Ideal Experience



Advanced Certificate or Diploma in Culinary Arts (NQF Level 5) at a recognised and reputable institution.

Minimum



Certificate in Culinary Arts (NQF Level 4) at a recognised and reputable culinary institution. Proven experience as a Chef de Partie or similar role, preferably in a single-standing restaurant. Must have a reputable, relevant and unbroken record of service.

Pay: R10000,00 - R12000,00 per month
