Recreation Africa Leisure Industries (PTY) Ltd requires the services of a Blockman with Chef experience
The Chef Blockman's main responsibility is to ensure our guests have a fantastic overall "Carnivore" experience, resulting in good to excellent ratings of 85% upwards.
The Chef Blockman takes full responsibility- and controls the butchery section - and its team members - of the Carnivore kitchen. The Chef Blockman is also expected to assist the Head Chef in the day-to-day operations of the kitchen, providing efficient and cost-effective food production in line with budgeted cost of sales.
The responsibilities will include:
Oversee all aspects of kitchen operations, including stock control, food preparation, and compliance with service standards.
Ensure personal and team safety, handle emergencies, and safely manage raw materials and equipment.
Perform specialized meat processing tasks such as curing, salting, drying, mincing, deboning, cutting, forming, and breaking meat into retail cuts.
Train and mentor junior staff, ensuring food quality, adherence to recipes, and timely preparation.
Maintain inventory, coordinate deliveries, and manage records and budgets.
Deputize for the Head Chef as needed, ensuring smooth kitchen operations.
Use problem-solving techniques to address challenges and make decisions.
Demonstrate strong knife skills, knowledge of animal anatomy, and precision in meat handling.
Provide excellent customer service and uphold high standards of food quality and presentation.
Minimum Requirements:
Experience: At least 3 years as a Butcher and 3+ years as an Assistant Head Chef, with expertise in inventory management, cost analysis, and hospitality operations.
Skills: Strong written and verbal communication, excellent numeracy, management, multitasking, organizational, and computer skills.
Personal Attributes: High energy, attention to detail, positive attitude, proactive, approachable, and able to motivate staff effectively.
Knowledge: Familiarity with hospitality standards, safety, and sanitation best practices.
Additional: Passion for food and beverage service, ability to work under pressure, and First Aid certification (advantageous).
